I wanted something that feels and tastes light and fresh. I chose a different type of vinegar than the usual balsamic. I brought in a wine vinegar that has quickly become a go to in my kitchen. The Lambrusco Wine Vinegar. Lambrusco Vinegar has a lush viscosity depth and wonderful sweetness. Sour-sharp and swooningly sweet with a bit of fizzy, and a touch of berry.

The lambrusco grape in Italy grows only in the Southern tier of Lombardy, parts of Emilia Romagna and Veneto. Made from the long natural maturation of Lambrusco wine and aged in oak barrels, it’s completely natural and contains no colorants or preservatives. Although this is technically a wine vinegar, it is sweeter than the other wine vinegars that we carry. It’s almost in a category of its own. It comes from the same vineyard as our Aged Balsamic vinegars in Modena, Italy.

I’m pairing it with our Blood Orange Olive Oil. A customer favorite, this flavorful infused olive oil adds a bright citrus twist to whatever it’s served on. It is easy to make a vinaigrette by adding most any balsamic to it. I love to use it in my baking. Brownies and bundt cakes in particular take on a whole new level with the citrus flavor.
The 2 together make a fabulous vinaigrette on their own, and as you’ll see in the recipe, have fun with veggies too.
