Apricot Spring Salad

A salad full of vibrancy. Add whatever ingredients you like in your salad. Ours is basic and delicious

Ingredients

For Salad

Spring mix lettuces
5-6 dried apricots
2 tablespoons almond slices
1/4 cup thin sliced purple/red onion

For Salad Dressing

1/4 cup Garlic Meyer Lemon Olive Oil
3 tablespoons Apricot Balsamic Vinegar
1/2 teaspoon minced shallot
1/4 teaspoon salt

Directions

For Salad

  1. Chop dried apricots.
  2. In a large bowl mix together lettuce, sliced onions, dried apricots and almonds.

For Salad Dressing

  1. Mince shallots.
  2. In a small bowl mix Olive Oil, Balsamic Vinegar, minced shallots and salt until well mixed.
  3. Pour dressing over lettuce mix and toss until the salad is well coated.
