The Artisanship of Balsamics

Our aged balsamic vinegars are 100% imported from Modena, Italy where the standards for making vinegar are legally mandated. The must of local grapes (freshly crushed grape juice with all the skins, seeds and stems) is boiled down to concentrate flavor. The resulting vinegar is then put into barrels for aging. During these years of aging a practice of meticulously topping off barrels from other barrels is followed to ensure a uniform flavor from year to year. These incredibly flavorful and authentic Balsamics have been aged for at least 12 years and follow all of the time-honored traditions of highest standard Italian Balsamic Vinegar production.
