Minty Citrus Salad with Blood Orange and Lambrusco Vinaigrette

Citrus is ripe for the taking right now, and this recipe makes it easy to get all the nutrients out of them. And it tastes delicious! This is a great recipe for a potluck, or for a refreshing healthy after dinner treat.

Blood Orange Olive Oil
Lambrusco Vinegar

Ingredients

2 Blood oranges or tangerines
1 Pink grapefruit
1 Navel orange
½ cup Pomegranate Seeds
½ Small red onion or 1 shallot, chopped
½ cup Pistachios, chopped
3 tablespoons Blood Orange Extra Virgin Olive Oil
1 tablespoon Lambrusco Wine Vinegar
½ teaspoon Honey
¼ teaspoon freshly chopped mint
Salt

Preparation

  1. Peel citrus, removing as much pith (the white stuff around the fruit) as possible, and slice them into wheels.
  2. Remove any seeds.
  3. Layer fruit on a serving dish, rotating the variety of citrus. Make it pretty!
  4. Sprinkle with salt and garnish with chopped onion (if desired) and pistachios.
  5. Whisk together olive oil, vinegar, honey, and mint until well combined; taste, adjust seasoning as needed and drizzle over salad.
  6. Garnish with pomegranate seeds and chopped mint.
